- 1 Bell Peppers chopped, green
- 2 Chilies green, slit lengthwise
- 1 bunch Coriander roughly chopped

- 1.5 tsp Salt or to taste

- Wash and chop the sponge gourd and green bell pepper. Boil the sponge gourd until slightly tender, then drain and set aside. This pre-cooking step helps the turai retain its shape in the curry while ensuring it cooks through evenly.
- In a small bowl or mortar and pestle, combine the green chilies, poppy seeds, and cilantro. Grind into a smooth paste. This paste adds a depth of flavor and a touch of heat to the curry.
- Heat the mustard oil in a pan or skillet over medium heat. Add the radhuni seeds, if using, and let them sizzle for a few seconds to release their aroma. Add the chopped green bell pepper and sauté until slightly softened.
