Ingredients
Chicken and Vegetables
Spices and Aromatics
- 7 clove Garlic crushed
- 2 inches Ginger grated or finely minced
- 2 Chili finely chopped (adjust to taste), green
- 1 tsp Fennel Seeds also known as saunf
- 2 Cardamom Pods green cardamom, lightly crushed
- 4 clove Cloves
- 2 inches Cinnamon Stick
- 1 Star Anise
- 1 sprig Curry Leaves
- 2 tsp Cumin Seeds also known as jeera
- 1 tsp Pepper black, ground
Other Ingredients
- 1 tbsp Coconut Oil
- 2 cup Coconut Milk thick coconut milk
- 8 Cashews soaked in water for 10 minutes, then ground into a paste
- 1.5 tsp Salt or to taste
- 1 cup Water
- 1 tsp Turmeric Powder

Preparation
- Finely chop the onions. Slit the green chilies. Crush the ginger and garlic together using a mortar and pestle. Peel and cube the potatoes. Soak the cashews in water for 10 minutes and then grind them into a smooth paste using a little water.
Sautéing the Spices
- Heat the coconut oil in a large pot or kadai over medium heat. Add the fennel seeds, cardamom pods, cinnamon stick, cloves, star anise, and curry leaves. Cook until the spices begin to crackle, releasing their aroma.
Building the Stew
- Add the crushed ginger and garlic, and the chopped onions. Sauté until the onions become translucent. Be careful not to brown them, as this will affect the color of the stew. Add the potatoes and sauté for a few minutes. Add the chicken pieces, turmeric powder, cumin powder, and salt. Sauté until the chicken is partially cooked.
Simmering and Finishing
- Pour in the coconut milk and water. Bring to a boil, then reduce the heat to low, cover, and simmer until the chicken and potatoes are tender. Remove the lid, stir in the cashew paste, and simmer until the raw smell of the paste is gone and it is fully incorporated into the gravy.
Thickening and Serving
- Increase the heat to medium-low and simmer until the gravy reaches your desired thickness. Transfer the stew to a serving bowl. Serve hot with appam, idiyappam, or egg appam.
