- 1 tbsp Split Chickpea roasted, split chickpeas
- 1 tbsp Urad Dal Flour roasted
- 1 tbsp Ragi Flour finger millet flour

- 1 tbsp Palm Sugar
- ½ cup Milk
- 2 cup Water

- ¼ tsp Cardamom Powder
Instructions
- Dry roast the red rice poha in a pan over medium heat until fragrant. This enhances the nutty flavor. Set aside to cool.
- In a blender or food processor, combine the cooled roasted red rice poha and roasted chana dal. Pulse until coarsely ground, but not into a fine powder. This creates a pleasant texture in the congee.
- Transfer the poha-dal mixture to a saucepan. Add the roasted urad dal flour and ragi flour. Gradually whisk in about ½ cup of water to form a smooth paste, ensuring no lumps form. This prevents the flours from clumping when added to the hot water.
- Add the remaining water to the saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Once boiling, reduce the heat to low. Stir in the palm sugar, cardamom powder, and milk. Simmer for a few minutes, or until the congee thickens slightly. The congee should be creamy and smooth.
