Instructions

Prepare the Rice

  • Cook basmati rice with water and salt in a pressure cooker for 5-6 whistles. Let the pressure release naturally, then fluff the rice with a fork. Set aside to cool completely.

Make the Tempering (Tadka)

  • Heat oil in a small pan. Add mustard seeds and cumin seeds; let them splutter.
  • Add curry leaves, asafoetida, green chilies, and ginger. Sauté for a few seconds until fragrant. Remove from heat.

Combine the Ingredients

  • Once the rice is completely cool, gently mix in the yogurt and milk until smooth. Avoid lumps; using your hands is recommended for a perfectly creamy texture.
  • Stir in the grated carrot, chopped cucumber, and chopped cilantro.

Finish and Serve

  • Pour the tempering over the curd rice. Add extra salt if needed, mix gently, and serve immediately or chill for later.

Recipe Notes

Expert Tips for the Perfect Curd Rice

  • For extra creaminess, use full-fat yogurt and let it come to room temperature before mixing.
  • Adjust the amount of milk to achieve your desired consistency. Thinner curd rice is refreshing, while thicker curd rice is more substantial.
  • Feel free to experiment with other vegetables! Finely chopped tomatoes, roasted peanuts, or even some cooked lentils would add delicious variations.
  • For a richer flavor, use coconut oil for tempering instead of vegetable oil.
