Ingredients
 

  • 200 gm Chicken legs and breasts preferably 200 gm with bones
  • 1 tbsp Chili Powder 1 tbsp, butter(1 tbsp), lemon juice 1 tbsp [marinate] kashmiri, salt to taste
  • 1 cup Lettuce 1 cup chopped iceberg
  • Cucumber sliced into rings with skin
  • 1 / Onion cup chopped
  • 1 / Bell Peppers cup chopped
  • Chilli 2 to 3 finely chopped, green
  • 3 tbsp Mayonnaise 2 to 3 tbsp mayo
  • 1 tsp Mirin 1 tsp or you can substitute with ready made teriyaki sauce
  • 1 tbsp Celery 1 tbsp finely chopped

Instructions
 

Prepare the Smoked Chicken

  • Rub the chicken with chili powder, butter, lemon juice, and salt. Marinate for 30 minutes. Bake in a preheated oven at 180°C (350°F) for 30 minutes, or until cooked through and no longer releasing liquid. Remove from oven and let cool slightly. Remove the chicken meat from the bones, shredding it into bite-sized pieces.

Smoke the Chicken (Optional)

  • For a smokier flavour, you can smoke the cooked chicken using a smoker or by placing it on a wire rack over burning charcoal. Smoke for 10-15 minutes, or until lightly smoky.

Assemble the Salad

  • In a large bowl, combine the chopped lettuce, cucumber, red onion, bell pepper, green chilies, and chickpeas. Add the shredded smoked chicken, mayonnaise, and mirin. Stir gently to combine.

Chill and Serve

  • Refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled and enjoy!
