Ingredients
For the Tortillas:
- 2 cup All-Purpose Flour also known as maida. extra flour may be needed for dusting.
- 1.5 tsp Salt
- 2 tbsp Olive Oil
- 1/2 - 3/4 cup Water add gradually until dough forms.
For the Chicken Filling:
- 250 grams Boneless, Chicken Breast skinless
- 1/4 cup Mayonnaise
- 2 tbsp Refined Oil vegetable oil can be substituted.
- 9 leaves Lettuce 4 leaves chopped, 5 leaves whole (iceberg or romaine).
- 1 Onion 2 medium, thinly sliced
- 1.5 tsp Herbs italian seasoning or a mix of oregano, and thyme., basil, dried
- 1 tsp Pepper freshly ground is preferred., black
- 1/2 tsp Salt for chicken, adjust to taste.
Instructions
Make the Tortillas
- Combine flour and salt in a large bowl. Add olive oil and mix well. Gradually add water, kneading until a smooth dough forms. Let the dough rest for 30 minutes.
- Divide the dough into 8 equal portions. Roll each portion into a 7-inch circle.
- Heat a skillet over medium heat. Cook each tortilla for about 1 minute per side, or until lightly browned. Keep warm.
Prepare the Chicken Filling
- Boil the chicken breast until cooked through. Let cool, then shred.
- Heat refined oil in a pan. Sauté shredded chicken with black pepper, dried herbs, and salt until heated through.
- In a bowl, combine mayonnaise, sliced onions, and the sautéed chicken. Mix well.
Assemble the Wraps
- Lay a tortilla flat. Place a lettuce leaf on the tortilla, leaving the top edge uncovered.
- Add a portion of the chicken filling and chopped lettuce to the center of the tortilla.
- Fold the bottom edge of the tortilla over the filling. Fold in both sides, then roll tightly to seal.
- Repeat with remaining tortillas and filling.
