Ingredients
For the Indian Spiced Chicken Marinade
- 1 tbsp Ginger Garlic Paste
- 1 tsp Sambal Oelek red chili garlic paste
- 2 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Coriander Powder dhania
- 1/2 tsp Garam Masala
- 1/2 tsp Pepper black
- 1/2 tsp Fennel Seeds
- 1/2 tsp Curry Powder
- 1 tsp Dried Fenugreek Leaf dried fenugreek leaves
- 1.5 tsp Salt or to taste
- 3 tbsp Vegetable Oil for the marinade and frying
For the Breading
- 1 cup All-Purpose Flour seasoned
- 1 tsp Onion Powder
- 1 tsp Basil dried
- 2 Large Eggs
- 2 cup Panko Breadcrumbs coarse breadcrumbs, lightly toasted
For the Masala Mayonnaise
- 3.5 tbsp Mayonnaise
- 3 tbsp Cream Cheese
- 10 Chicken Tenderloins thin fillets
- 1 tsp Salt or to taste
Instructions
Prepare the Indian Spiced Chicken Marinade
- Combine ginger-garlic paste, sambal oelek, red chili powder, turmeric, coriander powder, garam masala, black pepper, fennel seeds, curry powder, kasuri methi, salt, and 2 tbsp of oil in a bowl. Mix well to form a paste. Add a little water if needed to achieve a thick, spreadable consistency.
Marinate the Chicken
- Add the chicken tenderloins to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
Prepare the Seasoned Flour
- In a shallow dish, combine the all-purpose flour, onion powder, dried basil, and salt.
Prepare the Egg Wash
- In a separate shallow dish, whisk the eggs together.
Bread the Chicken
- Dredge each marinated chicken tenderloin in the seasoned flour, shaking off any excess. Dip into the egg wash, ensuring it's fully coated. Finally, coat thoroughly in the panko breadcrumbs.
Fry the Chicken

Prepare the Masala Mayonnaise
- In a small bowl, combine the mayonnaise and cream cheese. Mix until smooth and creamy. Stir in a spoonful of the leftover chicken marinade for extra flavor (optional).

- Remove the fried chicken tenders from the pan and place them on a wire rack to drain excess oil. Serve immediately with the creamy masala mayonnaise for dipping.
