Ingredients
 

Dry Ingredients

  • 1 cup Pearl Millet Flour bajra atta. ensure it's finely ground for best results.
  • 1.5 tsp Salt adjust to taste preference.

Wet Ingredients

  • 0.5 - 0.75 cup Water add gradually; the amount needed will depend on the flour's absorbency. the dough should be soft and pliable.

For Cooking & Serving (Optional)

  • 2 tbsp Ghee clarified butter; use for greasing and brushing the rotis for added flavor. vegetable oil can be substituted.
  • 1 tbsp Sesame Seeds optional, for added flavor and texture.

Instructions
 

Prepare the Dough

  • Mix the pearl millet flour and salt in a large bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Let the dough rest for at least 15 minutes, covered with a damp cloth.

Shape the Rotis

  • Divide the dough into small, lemon-sized balls. Roll each ball into a thin, circular roti using a rolling pin. Ensure the roti is evenly thin for even cooking.

Cook the Rotis

  • Heat a flat griddle or tawa over medium heat. Place a roti on the hot tawa. Cook for about 30 seconds on each side, or until small bubbles appear on the surface and the edges start to brown slightly. Sprinkle sesame seeds (optional) on one side before flipping.

Finish Cooking

  • Flip the roti and cook the other side for another 30 seconds. Using tongs, carefully puff up the roti by gently pressing it with the back of a spoon or spatula. Cook for another minute until evenly cooked and slightly puffed.

Serve

  • Remove the roti from the tawa. Brush with desi ghee (or oil) and serve hot with your favorite curries, dals, or chutneys.
