  • 3 Turnips peeled and diced into 1-inch cubes
  • 1 Onion medium, thinly sliced
  • 2 Tomatoes chopped, medium
  • 1 bunch Spinach about 5 oz, roughly chopped
  • 3-4 Chilis adjust to taste; or use 1-2 red chilies, green, slit lengthwise
  • 1/2 cup Coriander also known as coriander leaves, finely chopped

Getting Started

  • Heat the vegetable oil in a pan over medium heat.

Sautéing Aromatics

  • Add the cumin seeds and let them sizzle for about 30 seconds until fragrant.
  • Add the sliced onions and sauté until softened and lightly golden, about 5 minutes.
  • Stir in the ginger and garlic paste (if using) and cook for another minute until fragrant.

Building Flavor

  • Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes, allowing the spices to bloom and the tomatoes to soften.

Cooking the Turnips

  • Add the diced turnips, stir to coat them with the spice mixture, and cover the pan. Cook for 10-12 minutes, or until the turnips are about three-quarters cooked.

Finishing Touches

  • Stir in the chopped spinach and green chilies. Cover and cook for another 5-7 minutes, or until the spinach has wilted and the turnips are tender. The oil will separate slightly as it cooks.
  • Stir in the chopped cilantro.
