  • 1 medium Onion finely chopped
  • 2 medium Potato boiled and cubed
  • 1 cup Spinach chopped, fresh

Prepare the Spinach

  • Heat a nonstick pan over medium heat. Add the chopped spinach and cook until wilted and most of the water has evaporated. Set aside.

Sauté Aromatics

  • In the same pan, heat mustard oil. Add cumin seeds and asafoetida (hing). Once the seeds begin to sputter, add the finely chopped onion and sauté until translucent.

Add Spices and Potatoes

  • Add the ginger-garlic paste and cook for a minute. Stir in the red chili powder, turmeric powder, and garam masala. Cook for another minute until fragrant. Add the boiled and cubed potatoes, stirring to coat with the spices.

Combine and Finish

  • Cook for 5-6 minutes, stirring occasionally, until the potatoes are heated through. Add the cooked spinach and stir to combine. If the mixture is too dry, add a tablespoon of water.

Serve

  • Cook for another 3-4 minutes, or until heated through and well combined. Taste and adjust salt as needed. Serve hot with rotis or rice.
