Instructions

Preparation

  • Wash and thoroughly clean the water spinach. Finely chop the water spinach and set aside.

Sautéing Aromatics

  • Heat mustard oil in a pan over medium heat. Add mustard seeds and let them splutter. Add minced garlic and sauté for about 2 minutes until fragrant.

Cooking the Saag

  • Add the broken red chilies and sauté briefly. Then add the chopped water spinach, salt, and red chili powder (if using). Mix well.

Simmering and Finishing

  • Reduce heat to low, cover the pan, and let the saag simmer for 5-7 minutes, stirring occasionally. After 5-7 minutes, uncover, stir, and cook for another 2-3 minutes until the water spinach is tender but still retains a slight bite. Remove from heat and stir in lemon juice.

Serving

  • Serve the Nari Ka Saag hot with roti, paratha, or rice.

Recipe Notes

Expert Tips for the Best Nari Ka Saag:

  • For a deeper flavor, lightly roast the red chilies before adding them to the pan.
  • Don't overcook the water spinach; it should be tender-crisp.
  • Adjust the amount of red chili powder and chilies according to your spice preference.
  • Adding a squeeze of fresh lime juice at the end brightens the flavor.
