Ingredients
 

Mustard Greens

Vegetables

  • 1 Turnip small to medium size, peeled and diced
  • 1 Tomato medium-sized, finely chopped
  • 2 Chilies finely chopped (adjust to taste), green

Spices & Aromatics

  • 1 inch Ginger fresh, peeled and finely chopped
  • 3 clove Garlic finely minced
  • 1.5 tsp Salt to taste

Prepare the Mustard Greens

  • Wash the mustard greens thoroughly and chop them finely.

Sauté Vegetables

  • Heat a large pot or pan over medium heat. Add the chopped mustard greens, diced turnip, chopped tomatoes, green chilies, chopped ginger, and minced garlic. Add about 1/2 cup water.

Simmer the Greens

  • Cover the pot and simmer for 15-20 minutes, or until the greens are tender and have softened. Stir occasionally to prevent sticking.

Prepare the Tadka (Tempering)

  • In a separate small pan, heat the clarified butter (ghee). Once hot, add the cumin seeds and let them crackle.

Add Spices

  • Add the ginger-garlic paste, red chili powder, coriander powder, turmeric powder, and black pepper powder to the ghee. Sauté for about 30 seconds, stirring constantly, until fragrant.

Combine and Finish

  • Pour the tadka over the simmered mustard greens and stir well to combine. Add more water if needed to adjust the consistency. Simmer for another 5 minutes to allow the flavors to meld.

Serve

  • Serve hot with a dollop of clarified butter (ghee) and enjoy with makki ki roti (Indian cornbread).
