- 1 bunch Nari Ka Saag approximately 1 pound

- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1/2 tsp Chili Powder adjust to taste, red
- 1.5 tsp Salt or to taste
- 4 Chili adjust to taste, finely chopped; optional, green
Oil
- 1/4 cup Mustard Oil
Instructions
Prepare the Water Spinach
- Wash the water spinach thoroughly 3-4 times under cold running water. Remove any tough stems and finely chop the leaves.
Sauté the Aromatics
- Heat the mustard oil in a wok or large pan over medium heat. Add the finely chopped onions and sauté until they turn light pink, about 5-7 minutes.
Add Spices and Aromatics
- Add the ginger paste, garlic paste, and red chili powder. Sauté for another minute until fragrant, stirring constantly to prevent burning.
Cook the Water Spinach
- Add the chopped water spinach to the pan. Stir well to combine with the spices. Cook until the water spinach wilts and the excess moisture evaporates, about 5-7 minutes. Season with salt to taste.
Serve
- Once the oil separates from the saag and the spinach is tender, remove from heat. Serve hot with besan ki roti or rice.
