Ingredients
Spices & Aromatics
- 1 tsp Cumin seeds
- 1 tsp Chili Powder red
- 1 tsp Coriander dhania, powder
- 1/4 tsp Turmeric haldi, powder
- 1.5 tsp Salt or to taste
Vegetables
- 4 Onion thinly sliced
- 6 Tomato finely chopped
- 2 Chili Pepper green, slit
- 10 Curry Leaves
Instructions
Prepare the Ingredients
- Thinly slice the onions and finely chop the tomatoes. Slit the green chilies and keep curry leaves ready.
Sauté Aromatics
- Heat oil in a heavy-bottomed pan. Add cumin seeds and let them splutter. Add curry leaves and sauté briefly.
Cook the Onions
- Add the sliced onions and sauté until they turn golden brown and soft.
Add Tomatoes and Spices
- Add the chopped tomatoes and stir well. Add red chili powder, coriander powder, turmeric powder, and salt. Stir continuously to prevent burning.
Simmer and Finish
- Continue to cook, stirring frequently, until the tomatoes become mushy and release their water. The mixture will start to thicken and the oil will separate from the vegetables. Stir in the optional jaggery at the end.
Serve
- Remove from heat and serve hot with roti, chapati, or phulka.
