Ingredients
Vegetables
- 250 gm Turnip
- 1 Onion
- 1 Tomato
- 1 sprig Curry Leaves
Spices & Aromatics
- 2 tbsp Coconut grated
- 1 inch Ginger peeled
- 3 clove Garlic
- 0.5 tsp Peppercorn black
- 0.5 tsp Sambar Powder available in most indian grocery stores
- 0.25 tsp Turmeric
- 0.25 tsp Mustard Seed
- 0.25 tsp Gram black, split, urad dal
Instructions
Preparation
- Peel and roughly chop the onion, turnip, and tomato into medium-sized pieces.
Sauté Aromatics
- Heat 1 tbsp of oil in a pan or kadai. Add the chopped onion, ginger, and garlic. Sauté until golden brown. Remove and set aside.
Toast Coconut & Peppercorns
- In the same pan, add the remaining 1 tbsp of oil. Add the grated coconut and peppercorns. Cook until fragrant, then remove and set aside.
Blend the Aromatics
- Combine the sautéed onion mixture and the coconut mixture. Blend to a smooth paste using a little water.
Temper the Spices
- Heat oil in a clean pan or kadai. Add mustard seeds and split black gram. Once they splutter, add curry leaves.
Cook the Turnip
- Add the chopped turnip and salt to the pan. Stir in the turmeric powder and sambar powder. Cook until the turnip is slightly softened.
Add the Blended Paste
- Stir in the ground masala paste and cook until fragrant.
Simmer & Cook
- Pour in two cups of water. Cover and cook until the turnip is almost tender.
Finish the Dish
- Add the chopped tomatoes. Cover and continue cooking until the turnip is fully cooked and tender. Remove the lid and cook on medium heat until the sauce thickens slightly.
Serve
- Serve hot with chapathi, rice, or parathas.
