Instructions

Prepare the Soya Mixture

  • Soak soya flakes in hot water for 5 minutes. Drain well.
  • Boil peas until softened. Drain.
  • Combine the soaked soya flakes, boiled peas, and grated paneer in a food processor. Pulse for 5 seconds until coarsely minced. Do not over-process.
  • In a large bowl, combine the minced soya mixture with the onion, carrot, ginger-garlic paste, green chilies, oatmeal, garam masala, black pepper, coriander, chaat masala, and salt. Mix thoroughly.

Shape and Grill the Skewers

  • Let the mixture rest for 15 minutes to allow the flavors to meld. Lightly grease your hands with olive oil.
  • Shape the soya mixture into oblong pieces suitable for your skewers. Thread the mixture onto the skewers.
  • Preheat your oven to 220°C (425°F).
  • Brush the skewers lightly with olive oil. Grill in the preheated oven for 10-12 minutes, turning occasionally, and brushing with oil to ensure even browning.

Serve

  • Sprinkle with extra chaat masala. Serve hot, optionally with small pieces of raw onion and your favorite chutney.

Expert Tips for Perfect Soya Skewers

  • For extra flavor, marinate the soya mixture for longer – up to 30 minutes – before skewering.
  • If you don't have an oven, you can grill these skewers on a barbecue or in a grill pan.
  • Feel free to experiment with other vegetables; bell peppers, zucchini, or mushrooms would all be delicious additions.
  • Adjust the amount of green chilies according to your spice preference.
