- 1 tsp Matcha Tea Powder green
- 2 tsp Chia Seeds

- 1 tbsp Jaggery or 1 tablespoon maple syrup or agave nectar
- 1 tsp Vanilla Extract
- 1-2 tbsp Almond Milk add as needed for desired consistency, or other plant-based milk

- 1/4 tsp Salt enhances the overall flavor
Instructions
Prepare the Almonds
- Preheat oven to 250°F (120°C). Spread almonds in a single layer on a baking sheet. Bake for 10 minutes, then let cool completely (about 1-2 hours).
Make Almond Butter
- Once cooled, add the almonds to a food processor and blend until a smooth butter forms. This may take 10-15 minutes, scraping down the sides as needed.
Combine Ingredients
- Add the soy protein powder, matcha powder, jaggery (or maple syrup/agave), vanilla extract, and salt (if using) to the food processor with the almond butter. Pulse until well combined.
Adjust Consistency
- If the mixture is too dry to form a dough, add almond milk, 1 tablespoon at a time, until it reaches a consistency that holds its shape.
Shape and Chill
- Line an 8x8 inch baking dish with parchment paper. Press the mixture evenly into the dish. Cover and refrigerate for at least 3-4 hours, or preferably overnight, to firm up.
Cut and Serve
- Once firm, cut the mixture into bite-sized squares. Store in an airtight container in the refrigerator for up to one week.
