Instructions

  • Shallow fry the soya chaap pieces until lightly golden. Set aside. This initial frying helps to create a slightly crispy exterior and enhances the chaap's texture.

  • In a pan, heat the oil. Add the chopped ginger and sauté until fragrant. Then, add the onion, garlic, and tomato pastes. Sauté for a minute until the raw smell disappears.
  • Add the turmeric powder, cumin seeds, and Kashmiri red chili powder. Stir well to combine the spices with the paste. Pour in a little water to prevent the spices from burning.
  • Add the fried soya chaap, green peas, cinnamon stick, bay leaves, and cloves to the pan. Stir gently to coat the chaap in the flavorful sauce. Cook for 5 minutes, allowing the flavors to meld.

Recipe Notes

Expert Tips

  • For a richer flavor, marinate the soya chunks for at least 30 minutes before cooking. Longer marinades, even overnight, will result in deeper flavor penetration.
  • Adjust the spices to your liking. If you prefer a spicier dish, add more chili powder or green chilies. For a milder flavor, reduce the amount of spices.
  • Don't overcrowd the pan when cooking the soya chunks. This will ensure they brown evenly and have a nice texture.

Storage Instructions

  • Store leftover soya chunks in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or on the stovetop before serving.
