Ingredients
Soya Chunks and Noodles
- 1 cup Soya Chunks
- 75 gm Wheat Noodles whole
Vegetables
- 1 Bell Peppers green, thinly sliced
- 1 small Onion thinly sliced
- 1 cup Cabbage sliced
Sauce and Seasoning
- 2 Chilies dried, red
- 1 Chili green
- 1 tsp Chili Sauce red
- 1 tsp Chili Sauce green
- 1 Tbsp Tomato Ketchup
- 1 pinch Salt or to taste
- 1 tsp Soy Sauce optional
Instructions
- Thinly slice the onion and bell pepper. Mince the garlic.
- Soak the dried red chilies in a small bowl of water for 20 minutes to soften them. This rehydrates the chilies and makes them easier to grind into a paste.
- In a saucepan, bring 2 cups of water to a rolling boil. Add the soya chunks, cover the pan, and remove from heat. Let the soya chunks soak for 15 minutes to rehydrate and soften.
- In a large pot, bring 4 cups of water to a boil. Add the noodles, a pinch of salt, and 1 teaspoon of oil. The oil helps prevent the noodles from sticking together.
- Cook the noodles over high heat for 5-7 minutes, or until they are almost cooked through but still slightly firm to the bite (al dente).
- Drain the noodles in a colander and rinse them under cold water several times. This stops the cooking process and prevents the noodles from becoming sticky.
- Grind the soaked red chilies, green chili, red chili sauce, green chili sauce, and tomato ketchup into a smooth paste using a blender or mortar and pestle. Transfer the chili paste to a bowl.
- Heat 1 tablespoon of oil in a large nonstick pan or wok over medium heat. Drain the soaked soya chunks and rinse them thoroughly under running water, squeezing out excess water each time.
- Add the soya chunks to the pan and stir-fry until they lightly brown.
- Add the minced garlic to the pan and sauté until fragrant and lightly golden. Add the sliced onion, cabbage, and bell pepper to the pan. Increase the heat to high and stir-fry for about a minute to maintain their crunch.
- Reduce the heat to medium-low, then add the stir-fried soya chunks and the prepared chili paste to the pan. Cook for a couple of minutes, allowing the vegetables and soya chunks to absorb the flavors of the sauce.
- Finally, add the cooked noodles to the pan and toss gently to combine everything evenly. Ensure the noodles are well coated with the sauce and vegetables.
- Garnish with chopped green onions and serve hot.
