- 2 Tbsp Semolina suji
- 2 Tbsp Rice Flour
- 2 Tbsp Whole Wheat Flour whole

- 1 Tbsp Fruit Vinegar
- 1 tsp Moringa Masala
- 1 tsp Crystallized Drumstick Leaves sahjan
Instructions
- In a large bowl, combine the ragi flour, semolina, rice flour, whole wheat flour, and salt.
- Gradually add water and knead until a smooth, pliable dough forms. This may take 5-7 minutes.
- Cover the dough and let it rest for 10 minutes. This allows the flours to hydrate and will result in softer pithas.
- Heat the sesame oil in a pan over medium heat. Add the mixed vegetables and sauté until slightly softened.
- Add the fruit vinegar, moringa masala, crystallized drumstick leaves, and a pinch of salt. Sauté for another minute until fragrant.
- Divide the rested dough into equal portions. Roll each portion into a thin circle.
- Place a spoonful of the vegetable mixture in the center of each circle. Fold the dough over to form a semi-circle or other desired shape, sealing the edges well.
- Steam the pithas for 10 minutes, or until cooked through. The pithas will be firm and no longer doughy.
