Porridge Ingredients

  • 1 cup Barley also known as oomugi
  • 3 cup Water
  • 1 cup Milk dairy or non-dairy, adjust to desired consistency

Caramelized Banana Ingredients

  • 2 Bananas ripe bananas work best for caramelization
  • 1 tbsp Butter unsalted butter recommended
  • 1 tbsp Sugar optional, adjust to taste, brown

Optional Toppings

  • Fruit such as berries, fresh, kiwi, pomegranate, to taste
  • Maple Syrup Or Honey for extra sweetness, to taste
  • Nuts & Seeds such as chopped almonds, or chia seeds, to taste, walnuts

Prepare the Barley

  • Rinse the barley thoroughly under cold water and soak for at least 30 minutes.

Cook the Barley

  • Combine the soaked barley and 3 cups of water in a pressure cooker. Cook for 3 whistles, then reduce heat to low and simmer for an additional 10 minutes.

Make the Caramelized Bananas

  • While the barley is cooking, melt butter in a pan over medium heat. Add sliced bananas and brown sugar (if using). Cook, stirring occasionally, until bananas are soft and caramelized.

Finish the Porridge

  • Once the pressure cooker has cooled, carefully release the steam. Stir in 1 cup of milk (dairy or non-dairy) and heat gently until the porridge reaches your desired consistency.

Serve
