Ingredients
 

For the Multi-Millet Batter (Prepare ahead)

  • 1 cup Multi-Millet Batter store-bought or homemade. adjust water for desired consistency.
  • 1/2 tsp Salt for the batter, adjust to taste.

For the Egg Scramble

  • 2 tbsp Oil for cooking the eggs and dosa

Instructions
 

Prepare the Dosa Batter

  • Dilute the multi-millet batter with water to achieve a pourable consistency. Season with salt and set aside.

Prepare the Egg Filling

  • Heat 1 tbsp oil in a pan. Crack 2 eggs into the pan and add a pinch of salt. Scramble until cooked through.
  • Add the chopped onion and minced garlic. Sauté until the raw smell disappears.
  • Stir in the chili powder, soy sauce, and ketchup. Cook for 2 minutes, then remove from heat.

Cook the Dosa

  • Crack the remaining egg into a bowl and whisk with a pinch of salt.
  • Heat a lightly oiled dosa tawa or non-stick pan over medium heat. A sprinkle of water should sizzle gently; it shouldn't be smoking hot.
  • Pour a ladle of batter onto the hot tawa and spread it thinly in a circular motion.
  • Pour 2 tsp of the whisked egg onto the dosa and spread it evenly.
  • Drizzle a little oil around the edges of the dosa.
  • Once the dosa is cooked and the egg is set, spoon some of the prepared egg filling onto the center.
  • Fold the dosa in half and remove from the pan.

Serve

  • Serve the Egg & Multi-Millet Dosa hot with your favorite chutney or additional ketchup.

  • For a crispier dosa, use a well-seasoned cast iron tawa.
