  • In a bowl, whisk the multi-millet batter with 1 teaspoon of water until smooth. This helps to thin the batter slightly for even cooking.
  • Add the chopped onion, ginger, green chili, curry leaves, and salt to the batter. Mix well to combine.
  • Preheat the oven to 200°C (400°F).
  • Thoroughly grease a waffle iron with butter. This prevents the waffles from sticking and ensures easy removal.
  • Pour the batter into the preheated and greased waffle iron. Cook according to the manufacturer's instructions, until golden brown and crispy.
  • Carefully remove the cooked waffles from the iron and place them on a baking sheet.
  • Reduce the oven temperature to 180°C (350°F). Baking the waffles at a lower temperature after the initial browning helps to cook them through evenly.
  • Bake the waffles for 30 minutes.
  • Increase the oven temperature back to 200°C (400°F).
  • Flip the waffles and bake for another 8-10 minutes, or until they are golden brown and crispy on both sides.
  • Serve the waffles immediately with coconut chutney.
