Ingredients
For the Dough
- 1/2 cup Foxtail Millet Flour
- 3/4 cup Gram Flour
- 1 cup Fenugreek Leaves packed
- 1/4 cup Mint Leaves packed
- 1 1/2 tsp Salt
- 3/4 tsp Caraway Seeds
- 1/4 tsp Turmeric powder
- 2 tbsp Clarified Butter ghee
- Water as needed for kneading
For the Filling
- 1 tsp Clarified Butter ghee
- 1 Onion finely chopped, medium
- 1/4 tsp Ginger-Garlic Paste
- 1 Tomato finely chopped, large
- 1 Zucchini medium, thinly sliced
- 1 Bell Peppers green, julienned
- 1 1/2 tsp Salt or to taste
- 1/2 tsp Chaat Masala
- 1/4 tsp Coriander powder
- 1/4 tsp Pepper black, or to taste
Instructions
- In a large bowl, combine the foxtail millet flour, gram flour, salt, caraway seeds, fenugreek leaves, mint leaves, and turmeric powder.
- Gradually add water while kneading until a smooth dough forms. This may take several minutes. Kneading develops the gluten in the flour, resulting in a more pliable dough.
- Smear 2 tablespoons of ghee over the dough. Cover the bowl and let the dough rest for 20 minutes. This allows the dough to hydrate and become more elastic.
- Heat 1 teaspoon of ghee in a pan over medium heat. Sauté the ginger-garlic paste until fragrant, about 30 seconds.
- Add the chopped onions and sauté until translucent, about 5 minutes. Then, add the chopped tomatoes and sauté until softened, about 3 minutes.
- Add the sliced zucchini and julienned bell pepper. Sauté until slightly softened but still crisp-tender, about 3-5 minutes. We want to retain some texture in the vegetables.
- Season with salt, chaat masala, coriander powder, and black pepper. Stir well to coat the vegetables evenly.
- After the dough has rested, divide it into medium-sized balls.
- Place a ball of dough between two sheets of parchment paper lightly greased with ghee. Using your fingers or a rolling pin, flatten the dough into a thin circle, similar to making a roti or tortilla.
- Heat a griddle or large skillet over medium-high heat. Once hot, carefully peel off the top sheet of parchment paper and place the roti on the hot griddle.
- Cook for about 1-2 minutes per side, or until light brown spots appear and the roti is cooked through. Smear a little ghee on the cooked surface of the roti as it cooks.
- Place 2 tablespoons of the vegetable filling in the center of each cooked roti. Fold the roti in half or wrap it like a taco.
- Serve the Methi Millet Wraps immediately while hot. Enjoy!
