Ingredients
For the Tikki
- ½ cup Amaranth Seeds rajgira
- ½ cup Peanuts
- ½ cup Water Chestnut Flour
- 2 medium Potatoes boiled
- 2 medium Taro Root arbi, boiled
- 1-2 Chillies finely chopped, green
- 8-10 Coriander Leaves finely chopped
- Rock Salt to taste
- Ghee as needed, preferably homemade
Instructions
- Soak the amaranth seeds in water for 4-5 hours to soften them. This helps achieve a better texture in the final fritters.
- Meanwhile, boil the potatoes and taro root until tender. Allow them to cool slightly before peeling and mashing or finely chopping them.
- In a blender or food processor, combine the soaked amaranth seeds, peanuts, green chilies, coriander leaves, and rock salt. Blend into a smooth paste.
- In a mixing bowl, combine the mashed potatoes, taro root, and the amaranth paste. Mix well to combine.
- Gradually add the water chestnut flour to the mixture, mixing until a dough-like consistency is achieved. The flour acts as a binding agent, helping the fritters hold their shape.
- Divide the dough into equal portions and shape them into flat, round fritters (tikki).
- Heat ghee in a non-stick pan over medium heat. Shallow fry the tikkis for about 3-4 minutes per side, or until they turn golden brown and crispy. Ensure the ghee isn't too hot to prevent burning.
- Serve the Rajgira Tikki hot with coconut chutney or your favorite dipping sauce. These are a great source of energy after a fast and a healthy snack any time of day.
