Instructions

Activate the Yeast

  • In a small bowl, combine 1/4 cup warm water, 1/2 tsp sugar, and 1 tsp yeast. Let stand for 10 minutes until foamy.

Prepare the Garlic-Herb Oil

  • In a separate bowl, whisk together melted butter, olive oil, minced garlic, oregano, black pepper, and 1/2 tsp salt.

Make the Dough

  • In a large bowl, whisk together all-purpose flour and 1 tsp salt. Add the garlic-herb oil mixture to the flour mixture and mix well.

Combine and Knead

  • Gradually add the activated yeast mixture to the flour mixture, kneading until a smooth, slightly sticky dough forms. Add a little more warm water if needed to achieve desired consistency. Knead for 10-12 minutes until the dough is elastic and smooth.

First Rise

  • Form the dough into a ball, place it in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

Prepare the Filling

  • On a lightly floured surface, roll out the dough into a large circle or oval.

Assemble the Bread

  • Spread half of the dough with shredded cheese, cooked corn, and olives. Top with the remaining cheese.

Fold and Seal

  • Fold the other half of the dough over the filling, pressing gently to seal the edges. Pinch the edges to ensure a good seal.

Score and Brush

  • Using a sharp knife, make several cuts across the top of the dough, being careful not to cut all the way through. Brush the top with the remaining garlic-herb oil mixture.

Second Rise

  • Cover the stuffed bread and let rise for another 30 minutes in a warm place.

Bake

  • Preheat your oven to 210°C (410°F). Place the bread in a greased baking dish and bake for 20-25 minutes, or until golden brown. Cover loosely with foil halfway through baking to prevent burning.

Cool and Serve

  • Remove the bread from the oven and let it cool slightly on a wire rack before slicing and serving.

Recipe Notes

Expert Tips for the Best Garlic & Cheese Stuffed Bread:

  • For extra flavor, add a sprinkle of Parmesan cheese to the dough before the first rise.
  • If your dough seems too sticky, add a tablespoon or two of flour at a time until it becomes manageable.
  • Don't overbake the bread; it should be golden brown and cooked through, but not dry. Check for doneness around 15 minutes.
  • Serve immediately for the best texture and flavor. Leftovers can be stored in an airtight container at room temperature for 1-2 days.
