Ingredients
 

Dry Ingredients

  • 1 1/2 cup Whole Wheat Flour whole
  • 1 tbsp Sugar
  • 1 tbsp Yeast instant, or 1 tbsp active dry yeast (proofed in warm water with a pinch of sugar)
  • 1 tsp Salt

Wet Ingredients

Garlic & Herb Butter

  • 1 cup Cheese grated (cheddar, mozzarella, or your favorite)
  • 1 tsp Pepper optional, black

Instructions
 

Prepare the Dough

  • Combine whole wheat flour, sugar, salt, and yeast in a large bowl. If using active dry yeast, proof it first.
  • Add warmed milk and softened butter to the dry ingredients. Mix and begin kneading until combined.
  • Gradually add water to form a soft, smooth dough. Knead for 5-7 minutes to develop the gluten.
  • Incorporate 1 tbsp olive oil into the dough and knead for another 2 minutes.

First Rise

  • Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for about 1 hour, or until doubled in size.

Prepare the Garlic & Coriander Butter

  • While the dough is rising, combine softened butter, garlic paste, and chopped coriander in a small bowl. Mix well.

Assemble the Bread

  • Gently punch down the risen dough. On a lightly floured surface, roll the dough into a 1/4-inch thick rectangle.
  • Spread the garlic and coriander butter evenly over the dough, reserving some for later. Sprinkle with grated cheese and black pepper.
  • Roll the dough tightly into a log, then join the ends to form a circle. Cut several equidistant slits into the circle.
  • Place the bread in a greased 9-inch pie plate or round baking dish. Brush with the reserved garlic butter.

Second Rise & Baking

  • Let the shaped bread rest for 15 minutes.
  • Preheat oven to 400°F (200°C). Bake for 18-22 minutes, or until golden brown. Brush with additional butter after baking.
