Ingredients
Dough
- 0.5 tsp Active Yeast dry
- 0.5 cup Water lukewarm
- 0.5 tsp Sugar
- 1 cup All-Purpose Flour maida
- 1.5 tsp Salt or to taste
- 1 Tbsp Refined Oil
- 1 tsp Semolina suji
Filling
- 2 Tbsp Corn Kernels boiled
- 0.5 cup Mozzarella Cheese shredded
Flavor & Spices
- 5 clove Garlic finely chopped
- 1.5 tsp Oregano dried
- 2 tsp Chili Garlic Sauce
- 0.5 tsp Chili Flakes
- 1 pinch Pepper black
- 0.5 tsp Mango Powder amchur, dry
- 0.5 tsp Onion Powder
- 1 Tbsp Butter melted
Instructions
- In a small bowl, combine the active dry yeast, lukewarm water, and sugar. Mix well and let it rest in a warm place for 10 minutes to activate the yeast. This allows the yeast to proof, ensuring a light and airy bread.
- In a large bowl, whisk together the all-purpose flour, salt, and dried oregano. Add the chopped garlic. Create a well in the center and pour in the yeast mixture and refined oil.
- Knead the dough for about 10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with cling film, and let it rise in a warm place for at least 1 hour, or until doubled in size.
- While the dough is rising, prepare the filling. In a small bowl, combine the chili flakes, dry mango powder, onion powder, and black pepper. Set aside. Boil the corn kernels until tender, then drain and set aside. Have your shredded mozzarella cheese ready.
- Preheat the oven to 350°F (175°C). Punch down the risen dough and knead in the semolina for 7-8 minutes. This adds a nice texture to the bread.
- Roll out the dough into a thick circle, resembling a pizza base. Spread the chili garlic sauce over the surface, then sprinkle the boiled corn kernels and mozzarella cheese over half of the circle.
- Fold the dough over to create a half-moon shape, sealing the edges tightly. Brush the top with melted butter and make small slits for steam to escape.
- Sprinkle the spice mixture evenly over the bread. Bake for 20-25 minutes, or until golden brown. Let cool slightly before serving.
Recipe Notes
Good To Know
- For an extra layer of flavor, brush the dough with a mixture of melted butter, minced garlic, and a pinch of smoked paprika just before baking. This deepens the savory, spicy notes and adds a beautiful golden finish.
- If you prefer a stronger heat, mix in finely chopped pickled jalapeños or a sprinkle of red chili flakes directly into the cheese stuffing for a more pronounced spicy kick.
- To ensure the stuffed bread remains soft after baking, loosely cover it with a clean kitchen towel as it cools. This traps steam and keeps the crust tender.
- For a make-ahead option, assemble and stuff the bread, then freeze it unbaked. When ready to serve, let it thaw and bake as directed.
Expert Tips
- Use a variety of cheeses for a more complex flavor profile. Consider mixing mozzarella, provolone, cheddar, or even a sprinkle of Parmesan.
- Don't overfill the bread. Leave some space for the cheese to melt and expand without bursting out.
- For a crispier crust, bake the bread on a baking stone or preheated baking sheet.
Storage Instructions
- Store leftover stuffed bread in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days. Reheat in a warm oven or toaster oven before serving.
