- 1/4 cup All-Purpose Flour
- 1 Tbsp Butter cold, cut into 1-inch cubes
- 3 Tbsp Cashews coarsely ground; can be substituted with other nuts or omitted
- 1/2 tsp Vanilla Extract
- 1 Egg lightly beaten; substitute with 1 heaping tbsp plain yogurt if egg-free
- 1/4 tsp Baking Powder
- 1/4 cup Milk or less, as needed
- 1/2 tsp Cinnamon ground
For Plums
- 1 Tbsp Sugar
Instructions
- Preheat oven to 325°F (160°C). Grease a quarter-plate-sized baking dish.
- Pit and halve the plums. Arrange them cut-side down in the prepared baking dish.
- Sprinkle 1 tablespoon of sugar over the plums. Set aside.
- In a separate bowl, combine the remaining 3 tablespoons of sugar, all-purpose flour, coarsely ground cashews, and cold, cubed butter.
- Using your fingertips or a pastry blender, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. This creates a flaky cobbler topping.
- Add the lightly beaten egg, cinnamon, and vanilla extract to the crumble mixture. Gently fold in until just combined.
