Ingredients
Cobbler Batter
- ¾ cup Whole Wheat Flour whole
- ½ cup Almond Flour
- ¼ cup Oat Flour
- 1 cup Sugar brown
- 3 tsp Baking Powder
- ½ cup Yogurt thick
- 1 ½ cup Milk
- 1 tsp Vanilla Extract
Mango Filling
- 3 Alphonso Mango or any mango without strings, ripe
- ½ cup Sugar or jaggery powder, brown
- ½ cup Butter
Instructions
- Preheat oven to 400°F (200°C). Place the butter in a large baking pan. Place the pan in the preheating oven and let the butter melt completely, about 7-10 minutes. This creates a buttery base for the cobbler.
- In a large bowl, whisk together the whole wheat flour, baking powder, and almond flour. This ensures the dry ingredients are evenly distributed for a light and airy cobbler.
- Add the oat flour and the first cup of brown sugar to the dry ingredients. Whisk to combine.
- In a separate bowl, whisk together the milk, yogurt, and vanilla extract. Ensure these ingredients are at room temperature for optimal mixing.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix, as this can lead to a tough cobbler.
- Pour the batter over the melted butter in the baking pan. Do not stir.
- Peel and chop the mangoes into bite-sized pieces. In a bowl, gently toss the mangoes with the remaining ½ cup of brown sugar.
- Arrange the sugared mango pieces evenly over the cobbler batter. Some mango pieces may sink slightly, but that's perfectly fine.
- Bake for 50-60 minutes, or until the cobbler is golden brown and the crust is firm to the touch. The center should be set, and the mangoes should be bubbly.
