Ingredients
 

Pasta & Sauce

  • 200 gm Pasta any shape, cooked al dente
  • 200 gm Spinach fresh, packed
  • 1/4 cup Cheese processed, shredded or cubed
  • 1/4 cup Cashews raw, unsalted; or substitute with almonds
  • 5 clove Garlic

Seasoning & Aromatics

Optional Vegetables

  • 1 cup Vegetables bell peppers, broccoli, etc., mixed, roughly chopped carrots, tomatoes

Instructions
 

Prepare the Spinach Sauce

  • Combine spinach, processed cheese, garlic, cashews, 1 tbsp olive oil, salt, pepper, and 1 tsp Nilon's Pasta Noodle Masala in a food processor or blender. Blend until completely smooth, adding more olive oil if needed.

Sauté Vegetables (Optional)

  • Heat remaining 1 tbsp olive oil in a pan. Sauté the mixed vegetables until tender-crisp.

Combine and Simmer

  • Add the cooked pasta and spinach sauce to the pan with the vegetables (if using). Add 1/4 cup of pasta water to create a light sauce. Stir in the remaining 1 tsp of Nilon's Pasta Noodle Masala. Toss to coat evenly and cook for 2-3 minutes.

Serve

  • Serve the Creamy Spinach Pasta immediately. Garnish with extra processed cheese, if desired.
