  • Mix gram flour, oil, kasuri methi, salt, red chili powder, anise seeds, and carom seeds in a large bowl.
  • Gradually add water while mixing until a soft, pliable dough forms.
  • Knead the dough for 5-7 minutes until smooth and elastic.
  • Cover the dough and let it rest for at least 15 minutes.

Roll and Cook the Roti

  • Divide the dough into equal-sized balls (about lemon-sized).
  • Roll each ball into a thin, circular roti using a rolling pin.

Cooking on the Tawa

  • Heat a flat griddle or tawa over medium heat.
  • Place the rolled roti on the hot tawa and cook for about 30 seconds per side, or until small bubbles start to appear.

Direct Flame Cooking

  • Carefully move the roti directly over a low flame for a few seconds on each side, to create a slightly charred and puffed texture (optional, for a crispier roti).
