Instructions

Prepare the Churma

  • Mix whole wheat flour and semolina in a large bowl. Add ghee and rub it into the flour until the mixture resembles breadcrumbs.
  • Gradually add milk, mixing until a stiff, pliable dough forms.
  • Roll the dough into small balls, about 1 inch in diameter.
  • Press each ball flat with your fist, creating a small, slightly flattened disc.
  • Deep fry the discs in hot ghee over low to medium heat until they are golden brown and crispy. This will take about 5-7 minutes, flipping occasionally.
  • Remove the fried churma discs from the oil and allow them to cool completely.
  • Once cooled, grind the churma discs into a coarse crumbly mixture using a food processor or rolling pin.

Assemble the Laddu

  • Transfer the ground churma into a large mixing bowl. Add the desiccated coconut, chopped nuts and dried fruits, and ghee. Mix well to combine.
  • Gradually add powdered sugar, mixing until the mixture comes together and is moist enough to form into balls.
  • Shape the mixture into small balls, rolling them gently between your palms.
  • Serve and enjoy your delicious Churma Laddu!

Recipe Notes

Expert Tips for Perfect Churma Laddu

  • For extra flavor, toast the nuts and dried fruits in a dry pan before adding them to the laddu mixture.
  • If the dough is too dry, add a little more milk; if it's too sticky, add a little more flour.
  • Use good quality ghee for the best flavor and texture. The ghee adds a rich, buttery note that is essential to the recipe.
  • Allow the churma to cool completely before grinding; this prevents it from becoming sticky and difficult to work with.
