  • In a large pot, combine the chopped mixed vegetables and enough water to cover them completely. Bring the water to a boil over high heat.

  • Once boiling, reduce the heat to medium-low, add the bay leaf, black peppercorns, and lemongrass. Simmer until the vegetables are tender, about 15-20 minutes. Test with a fork to ensure they are easily pierced.

  • Remove the pot from the heat. Discard the bay leaf and lemongrass. Using an immersion blender or carefully transferring the soup to a regular blender, blend the soup until smooth. This creates a creamy, velvety texture.
