Ingredients
Vegetables
- 1 bowl Vegetables cauliflower), chopped (such as carrots, green beans, mixed, peas, potatoes
Spices and Aromatics
- 1/2 tsp Fenugreek Powder
- 1 Bay Leaf
- 2-3 Peppercorns black
- 1/2 bunch Lemongrass
Seasoning
- 1-2 tsp Salt to taste
- 1 tbsp Lemon Juice
Instructions
- In a large pot, combine the chopped mixed vegetables and enough water to cover them completely. Bring the water to a boil over high heat.
- Once boiling, reduce the heat to medium-low, add the bay leaf, black peppercorns, and lemongrass. Simmer until the vegetables are tender, about 15-20 minutes. Test with a fork to ensure they are easily pierced.
- Remove the pot from the heat. Discard the bay leaf and lemongrass. Using an immersion blender or carefully transferring the soup to a regular blender, blend the soup until smooth. This creates a creamy, velvety texture.
- Stir in the fenugreek powder and lemon juice. The fenugreek adds a slightly bitter, earthy note that complements the vegetables, while the lemon juice brightens the flavors.
- Season with salt to taste. Serve the soup warm and enjoy!
