Dry Ingredients

Wet Ingredients

  • 1/2 cup Butter softened, unsalted
  • 1 cup Jaggery also known as gur or khand; can substitute with brown sugar
  • 1 tbsp Water for flaxseed meal mixture
  • 200 gm Chyawanprash
  • 2-4 tbsp Milk as needed to adjust dough consistency
  • 1/4 cup Caster Sugar for rolling the cookies
  • 1 tbsp Flaxseed Meal

Instructions
 

Prepare the Flaxseed Meal Mixture

  • In a small bowl, combine 1 tbsp flaxseed meal and 1 tbsp water. Let it sit for 5-7 minutes until it becomes gelatinous.

Cream Butter and Jaggery

  • In a large bowl, cream together the softened butter and jaggery until light and fluffy.

Combine Wet and Flaxseed Mixture

  • Add the flaxseed meal mixture to the creamed butter and jaggery. Mix well to combine.

Incorporate Chyawanprash

  • Stir in the Chyawanprash until evenly distributed throughout the mixture.

Combine Dry Ingredients

  • In a separate bowl, whisk together the whole wheat flour, baking soda, salt, and ground ginger.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Add milk, a tablespoon at a time, if needed to achieve a soft, pliable dough.

Preheat Oven and Prepare Baking Sheet

  • Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.

Shape and Roll Cookies

  • Roll the dough into golf ball-sized portions. Roll each ball in castor sugar.

Bake the Cookies

  • Place the cookies onto the prepared baking sheet and gently flatten them slightly with your palm. Bake for 12-15 minutes, or until lightly golden brown. Check for doneness around 12 minutes, as oven temperatures can vary.

  • Remove the cookies from the oven and let them cool completely on the baking sheet before serving.
