Prepare the Banana Stem

  • Remove the tough outer layers of the banana stem. Wash the inner core thoroughly and pat it dry with a clean kitchen towel. Slice off approximately 1/2 inch from both ends of the stem. Cut the stem into 3-4 mm thick rounds.

Marinate and Blend

  • Soak the banana stem slices in the buttermilk for at least 1 hour. This allows the stem to soften and absorb the buttermilk's flavor. After marinating, transfer the banana stem and buttermilk to a blender. Blend until smooth. Strain the mixture through a fine-mesh sieve, discarding the fibrous solids. You should have a smooth, creamy liquid.

Make the Spice Tempering

  • Heat the oil in a small pan over medium heat. Add the mustard seeds, cumin seeds, and peppercorns. Allow them to splutter and pop. Then, add the dry red chili and curry leaves. Cook for about 15 seconds, until fragrant. Remove from heat immediately.
