Ingredients
Taro Root
- 200 gm Taro Root kocku
Aromatics and Spices
Paste and Oil
- 2 tbsp Poppy Seeds
- 2 tbsp Mustard Oil

Instructions
- Wash the taro roots thoroughly. Boil them until tender. This usually takes about 15-20 minutes, depending on the size of the roots. You'll know they're done when a fork easily pierces them.
- Once the taro roots are cool enough to handle, peel off the skin. Mash the cooked taro roots thoroughly using a fork or a potato masher.
- In a food processor or mortar and pestle, combine the poppy seeds, garlic cloves, and green chilies. Grind into a smooth paste.
- Heat the mustard oil in a pan or tempering ladle over medium heat. Add the dried red chilies and roast until they darken slightly and become fragrant. Remove the chilies from the oil and set aside.
- Add the chopped onion to the same pan and sauté until translucent and softened. This enhances the flavor of the bharta. Avoid browning the onions.
- In a mixing bowl, combine the mashed taro root, poppy seed paste, sautéed onions, and salt. Gently crush the roasted red chilies and add them to the bowl as well.
- Mix all the ingredients together thoroughly. Drizzle the raw mustard oil over the mixture. This adds a distinct pungent flavor to the dish.
- Garnish with freshly chopped coriander leaves and the remaining roasted red chilies. Serve the Gaati Kochur Bharta warm with rice or roti.
