Ingredients
For the Dhokla Batter
- 1/2 cup Corn Flour maize flour
- 3/4 cup Semolina also known as suji or rava
- 2 tbsp Gram Flour also known as besan
- 1 cup Mango Puree from fresh, ripe mangoes
- 1 cup Buttermilk
- 1 tbsp Chili Paste green, or 1 tsp ginger-garlic paste
- 1 1/2 tsp Salt adjust to taste
- 1 tsp Baking Soda eno fruit salt
For the Tempering
- 2 tbsp Cooking Oil
- 1 tsp Mustard Seeds also known as rai
- 1/4 tsp Asafoetida also known as hing
Instructions
Prepare the Mango Puree
- Puree 1 cup of ripe mangoes until smooth.
Make the Batter
- In a large bowl, whisk together the maize flour, semolina, chickpea flour, mango puree, buttermilk, green chili paste, and salt. Let the batter rest for at least 30 minutes, or until it thickens to the consistency of pancake batter. If it's too thick, add more buttermilk.
Steam the Dhokla
- Lightly grease a steamer or baking dish. Just before steaming, add the Eno fruit salt to the batter along with 1 tablespoon of water. Gently whisk to combine. Immediately pour the batter into the prepared dish.
- Steam for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the Tempering
- While the dhokla is steaming, heat the oil in a small pan. Add the mustard seeds and asafoetida. Once the mustard seeds start to pop, remove from heat.
Assemble and Serve
- Let the dhokla cool slightly before cutting into squares. Drizzle the tempering over the dhokla. Garnish with grated coconut and chopped coriander leaves. Serve warm with chutney of your choice (coriander chutney or sweet chutney are excellent choices).
