Ingredients
 

For the Poha

  • 1 cup Flattened Rice beaten rice; rinse thoroughly and set aside until needed., poha
  • 1 medium Onion finely chopped
  • 1 Tomato finely chopped, medium-sized
  • 1/2 Bell Peppers bell pepper, finely chopped
  • 1 medium Potato boiled and cubed

For the Tempering

  • 4 tsp Oil vegetable or canola oil
  • 1 tsp Mustard Seeds rai
  • 2 tsp Peanuts
  • 2 Chili finely chopped; adjust to your spice preference, green

Prepare the Vegetables

  • Wash and set aside the poha. Finely chop the onions, tomatoes, capsicum, and spring onions. Boil the potatoes until tender, then cube them.

Make the Tempering

  • Heat the oil in a pan over medium heat. Add the mustard seeds and let them splutter. Add the peanuts and sauté until lightly browned.

Sauté the Vegetables

  • Add the chopped onions and green chilies to the pan and sauté for about a minute. Then, add the chopped tomatoes, capsicum, and potatoes. Stir in the turmeric powder and red chili powder. Sauté for 2-3 minutes until the vegetables are slightly softened. Add salt to taste.

Cook the Poha

  • Add the washed poha to the pan and mix gently. Stir in the sugar. Cover the pan and cook for 5 minutes, or until the poha is heated through and slightly softened. Do not overcook.

Garnish and Serve

  • Garnish with chopped coriander and pomegranate seeds. Serve hot and enjoy!
