For the Poha

For the Vegetable Sauté

  • 1 tbsp Oil vegetable or coconut oil
  • 1 tsp Mustard Seeds rai
  • 8 leaves Curry Leaves
  • 1 tbsp Onion finely chopped
  • 3 Chilies adjust to taste, finely chopped, green
  • 1/2 cup Carrot finely chopped
  • 1/2 cup Peas fresh or frozen, green
  • 1/2 cup Corn fresh or frozen, kernels, sweet
  • 1 tbsp Lemon Juice freshly squeezed

Prepare the Poha

  • Wash the flattened rice (poha) thoroughly under cold water until the water runs clear. Gently mix in salt, turmeric powder, and sugar. Let it sit for at least 30 minutes, or up to 1 hour, to soften.

Sauté the Vegetables

  • Heat oil in a pan over medium heat. Once hot, add mustard seeds and let them splutter. Add curry leaves and green chilies. Sauté for a minute until fragrant.
  • Add finely chopped onions and sauté until translucent. Add the chopped carrots, green peas, and sweet corn. Stir well and add salt to taste. Cover and cook for 3-4 minutes, until the vegetables are tender-crisp.

Combine and Finish

  • Gently add the soaked poha to the pan with the cooked vegetables. Stir carefully to combine, ensuring not to break the poha. Cook for another 2-3 minutes, stirring occasionally, until heated through and well combined. Be careful not to overcook.

Serve

  • Remove from heat and stir in the freshly squeezed lemon juice. Serve hot as a breakfast, lunch, or snack.
