Ingredients
Dry Ingredients
- 2 cup Whole Wheat Flour whole
- 1 tsp Baking Soda
- 1 tsp Salt or to taste
- 1 tbsp Milk Powder
- 1 tbsp Herbs dried, or a blend of your choice, such as rosemary, thyme
- 1 tsp Chili Flakes
Wet Ingredients
- 1 cup Buttermilk make buttermilk by combining 1 cup of milk with 1 tablespoon of white vinegar or lemon juice. alternatively, use 1/4 cup plain yogurt mixed with 3/4 cup milk.
- 1 tbsp Milk for brushing the top of the bread
Instructions
Prepare the Buttermilk
- Combine milk and vinegar (or lemon juice/yogurt) and let it sit for 5-10 minutes to curdle.
Preheat Oven & Combine Dry Ingredients
- Preheat oven to 350°F (180°C). In a large bowl, whisk together whole wheat flour, baking soda, salt, milk powder, dried herbs, and chili flakes.
Make a Well & Add Wet Ingredients
- Create a well in the center of the dry ingredients. Pour in the buttermilk and gently mix until just combined. Do not overmix.
Shape & Score the Bread
- Turn the dough out onto a lightly floured surface. Gently shape it into a round loaf (about 6-8 inches in diameter). Traditionally, a cross is scored on top to allow steam to escape during baking. Use a sharp knife to make a 1/2-inch deep cross on the top of the loaf.
Bake the Bread
- Place the loaf on a baking sheet lined with parchment paper. Brush the top with a little milk. Bake for 20 minutes at 350°F (180°C). Increase the oven temperature to 400°F (200°C) and bake for another 5-10 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

- Remove the bread from the oven and let it cool completely on a wire rack before slicing and serving. Enjoy!
