Instructions

Prepare the Dry Ingredients

  • Whisk together the all-purpose flour, whole wheat flour, baking soda, and salt in a large bowl.

Cut in the Butter

  • Add the cold, cubed butter to the flour mixture. Use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Combine Wet Ingredients

  • In a separate bowl, whisk together the buttermilk and egg.

Form the Dough

  • Make a well in the center of the dry ingredients. Pour the wet ingredients into the well and gently stir until just combined. Do not overmix. The dough will be slightly sticky.

Shape and Score the Bread

  • Turn the dough out onto a lightly floured surface. Gently shape it into a round disc about 1 inch thick. Using a sharp knife, cut a cross into the top of the dough.

Bake the Bread

  • Place the bread on a baking sheet lined with parchment paper. Bake in a preheated oven at 450°F (232°C) for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent it loosely with foil.

Cool and Serve

  • Let the bread cool completely on a wire rack before slicing and serving. Enjoy warm with butter, jam, or your favorite spread.

Recipe Notes

Expert Tips for Perfect Soda Bread

  • Use cold ingredients: Cold butter and buttermilk are key to a light and fluffy texture.
  • Don't overmix: Overmixing the dough will develop the gluten and result in a tough bread. Mix only until the ingredients are just combined.
  • Adjust baking time: Baking times may vary depending on your oven. Start checking for doneness around the 15-minute mark.
  • Proper cooling: Allow the bread to cool completely before slicing to prevent it from crumbling.
