Instructions

Prepare the Batter

  • Combine the whole wheat flour, rice flour, turmeric powder, red chili powder, green chilies, coriander, salt, and onions in a large bowl.
  • Gradually add water while mixing until a smooth, watery batter forms. The batter should be pourable, similar in consistency to pancake batter.
  • Let the batter rest for at least 1 hour. This allows the flavors to meld and results in crispier dosas.

Cook the Dosa

  • Heat a non-stick tava (griddle) or frying pan over medium heat. Lightly grease with oil.
  • Pour a large spoonful of batter onto the hot tava, spreading it thinly into a round shape.
  • Immediately sprinkle chopped onions evenly over the dosa.
  • Cook for 1-2 minutes, or until the edges begin to lift and the bottom is lightly browned.
  • Carefully flip the dosa and cook the other side for another 1-2 minutes, until golden brown and crispy.
  • Remove the dosa from the tava and serve hot with your favorite chutney.

Recipe Notes

Expert Tips for the Perfect Atte Ka Dosa

  • For extra crispy dosas, use a well-seasoned tava and ensure it's hot enough before adding the batter.
  • Don't overcrowd the pan; cook the dosas in batches to ensure even cooking and crispiness.
  • Adjust the amount of water in the batter to achieve your desired consistency. A slightly thinner batter will result in a crispier dosa.
  • Experiment with different additions to your Atte Ka Dosa, such as finely grated carrots, potatoes, or even cheese for a unique twist!
