Instructions

Prepare the Batter

  • Combine all dry ingredients in a large mixing bowl. Add the chopped green chili, coriander, yogurt, and salt. Gradually add water while mixing until a smooth, thin, crepe-like batter is formed. Let the batter rest for 5-10 minutes.

Cook the Dosas

  • Heat a non-stick tawa (griddle) over medium heat. Lightly grease with ghee.
  • Pour a ladleful of batter onto the hot tawa. Quickly spread it into a thin, even circle using the back of the ladle.
  • Drizzle a little ghee around the edges of the dosa.
  • Cover the tawa with a lid and cook for 3-5 minutes, or until the edges begin to lift and the bottom is lightly browned.
  • Carefully flip the dosa and cook the other side for another 2-3 minutes, until golden brown and crispy.
  • Remove from the tawa and serve immediately with sambar, chutney, or your favorite accompaniments.

Recipe Notes

Expert Tips for Perfect 5-Grain Dosas

  • For a smoother batter, you can blend the dry ingredients briefly in a blender before mixing them with the wet ingredients.
  • Adjust the consistency of the batter according to your preference. A slightly thicker batter will result in thicker dosas, while a thinner batter will create thinner, crispier dosas.
  • Don't overcrowd the tawa. Cook the dosas one at a time to ensure even cooking and browning.
  • If your dosas are sticking to the tawa, lightly grease it with more ghee before each dosa.
