  • 1/2 cup Onion finely chopped
  • 1/2 cup Tomato finely chopped
  • 2 tbsp Chili finely chopped (optional), green
  • 1/4 tsp Salt for topping
  • 2 tbsp Oil for cooking

Instructions
 

Prepare the Batter

  • Firstly, in a bowl, combine semolina, yogurt, baking soda, and salt. Add water gradually while whisking continuously until a smooth, slightly thick batter forms. Avoid lumps.
  • Let the batter rest for 15-20 minutes.
  • Gently whisk the batter again before cooking.

Cook the Uttapam

  • Heat a griddle or tawa over medium heat. Lightly brush with oil.
  • Optionally, wipe the tawa with an onion slice to prevent sticking.
  • Pour a ladleful of batter onto the hot griddle and spread it into a small, round pancake.
  • Sprinkle the chopped onions, tomatoes, and green chilies (if using) evenly over the uttapam.
  • Season with a pinch of salt.
  • Drizzle a little oil around the edges and on top of the uttapam.
  • Cook for 2-3 minutes on low heat until the bottom is golden brown and slightly crispy.
  • Carefully flip the uttapam and cook for another minute on the other side.
  • Cook for a few more seconds to ensure it's cooked through.
  • Remove the uttapam from the griddle and serve hot with your favorite chutney.
