Potato pancakes, latkes, deruny or boxties are shallow-fried pancakes of grated or ground potato, flour and egg, often flavored with grated garlic or onion and seasoning.

Ingredients
- 3 potatoes
- 3 tablespoon all purpose flour
- 2 egg
- 1 green chili finely chopped
- 2 garlic pods
- Salt
- 1/2 teaspoon red chili powder
- 1/4 teaspoon mixed herbs
- 1/4 teaspoon black pepper powder
- Oil for shallow fry

- Grate potatoes n soaked it in chill water for 5minutes. Wash it in running water. Squeeze potatoes well. Transfer in mixing bowl. Grate garlic in it.
- Mix ingredients (potatoes, garlic, all purpose flour, eggs, salt, green chillies, red chili powder, black pepper powder, herbs) Mix it well n make smooth batter. Make sure there is no lumps.
- Heat 2 tablespoons oil on nonstick pan. Pour 1 serving spoon batter in centre n spread it in round let them cook for 3minutes on low flame, when pancake change the color into brown flip n cook from other side till it done .Transfer it to a plate.
- Make all the pancakes in same way. Potato pancakes r ready to serve. Serve this with tomato ketchup.
Notes
U can add little corn flour with all purpose flour, I used eggs for batter binding.
