Instructions

Prepare the Sooji Batter

  • Combine semolina, powdered sugar, and 1/2 cup of yogurt in a bowl. Mix well and let it rest for 15 minutes.

Cook the Chocolate Vada

  • Heat ghee in an appam pan or small non-stick pan. Pour a small amount of the sooji batter into each pan, creating a small circle.
  • Place a few pieces of dark chocolate in the center of the batter.
  • Top with more batter, gently pressing to cover the chocolate.
  • Cover and cook for 3-5 minutes on low heat, or until golden brown and cooked through.
  • Flip the vada and cook for another 3-5 minutes on the other side.

Make the Creamy Yogurt Dip

  • In a separate bowl, whisk together the remaining 1/3 cup yogurt and whipped cream until smooth and creamy.

Assemble and Serve

  • Transfer the cooked vadas to a serving plate.
  • Drizzle the creamy yogurt dip over the vadas.
  • Garnish with chocolate syrup and chocolate shavings (optional).
  • Serve warm and enjoy!

Recipe Notes

Expert Tips for Perfect Chocolate Sooji Vada

  • For extra fluffy vadas, whisk the yogurt batter lightly before adding the semolina.
  • Don't overcrowd the pan; cook the vadas in batches to ensure even cooking and browning.
  • Adjust the amount of powdered sugar to your liking. You can also add a pinch of cardamom powder for extra flavor.
  • If you don't have an appam pan, you can use a small non-stick pan or even a regular frying pan.
