Ingredients
For the Dosa
- 1.5 cup Dosa Batter Ready-made or fermented overnight
- 1 teaspoon Oil For greasing the tawa
For the Coconut Chutney
For the Chutney Tadka
- 1/2 teaspoon Oil
- 1/4 teaspoon Mustard Seeds
- 5 Curry Leaves Fresh
- 1 Red Chilli Dried
Instructions
Making the Coconut Chutney
- Add grated coconut, roasted chana dal, green chilli, ginger, salt and water to a blender. Grind to a smooth paste. Transfer to a bowl.
- Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and dried red chilli. Pour this tadka over the chutney and mix gently. Set aside.
Preparing the Tawa
- Heat a flat tawa or non-stick pan on medium-high heat. Once hot, reduce to medium. Sprinkle a few drops of water on the surface - if it evaporates immediately the tawa is ready.
- Lightly wipe the tawa with a half onion dipped in oil or use a few drops of oil spread with a paper towel. This prevents sticking and gives an even surface.
Cooking the Dosa
- Pour one ladle of batter at the centre of the tawa. Using the back of the ladle, spread it in a circular motion outward to form a thin round. Work quickly and confidently.
- Drizzle a few drops of oil around the edges. Cook on medium heat for 2 to 3 minutes until the edges start to lift and the base turns light golden.
- Fold the dosa in half or roll it gently. Remove from the tawa and serve immediately with the coconut chutney on the side. Repeat for the remaining batter.
