  • Soak the urad dal, rice, fenugreek seeds, and poha in enough water for at least 4-6 hours, or preferably overnight. This allows the grains to soften and begin fermentation.
  • Grind the soaked ingredients with enough water to form a very smooth paste. Be careful not to add too much water, as this will make the batter too thin.
  • Allow the batter to ferment in a warm place for 8-10 hours. Ensure the container is large enough to accommodate the batter as it rises during fermentation.
  • Add salt to the fermented batter and mix well.
  • Heat a non-stick griddle or tawa over medium heat.
  • Once the griddle is hot, pour a ladleful of batter onto the center. Quickly spread the batter thinly with the back of the ladle in a circular motion, working outwards from the center. Spreading quickly prevents the batter from sticking and ensures a crispy dosa.
  • Drizzle a teaspoon of ghee or oil over the dosa and around the edges.

  • Cook the dosa over medium heat until it turns golden brown and crispy.
