Make the Pizza Dough

  • In a small bowl, combine active dry yeast, sugar, and 1/2 cup of warm water (105-115°F). Let stand for 5-10 minutes until foamy.
  • In a large bowl, whisk together all-purpose flour and salt.
  • Add the yeast mixture and olive oil to the flour mixture. Knead until a smooth dough forms. Add more warm water, a tablespoon at a time, if needed to achieve a soft, slightly sticky dough.
  • Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for at least 3 hours, or until doubled in size.

Make the Pizza Sauce

  • In a saucepan, combine chopped tomatoes, tomato ketchup, oregano, red pepper flakes, sugar, and salt. Simmer for 10-15 minutes, or until the sauce has thickened to your desired consistency.

Assemble the Pizza

  • Preheat oven to 400°F (200°C).
  • Punch down the risen dough and roll it out into a 12-inch circle.
  • Lightly oil a baking sheet. Transfer the rolled-out dough to the prepared baking sheet.
  • Arrange the processed cheese cubes around the edge of the pizza crust. Cut each cube into 3 smaller rectangles for better distribution.
  • Gently pull the edges of the dough outwards and then fold each section inwards by 90 degrees creating a “pocket” for the cheese, leaving a gap of about 2 inches between each fold.
  • Spread the pizza sauce evenly over the pizza crust.
  • Top with bell peppers, black olives, jalapenos (if using), and sliced tomatoes.
  • Sprinkle shredded mozzarella cheese over the toppings.

Bake the Pizza

  • Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  • Garnish with additional oregano and red pepper flakes (optional).
  • Let cool slightly before slicing and serving. Enjoy!
